JOHANAN ESPINOSA-RAMIREZ

Dr. Johanan Espinosa-Ramirez is a Research Professor in the Department of Bioengineering at Tecnologico de Monterrey in Mexico, where she teaches undergraduate and postgraduate courses. She holds a PhD in Biotechnology with a focus on Food Science. Since the beginning of her career her research topics have been focused in the development and characterization of ingredients and products based on cereals and legumes. She has worked in the development of gluten-free beers and looking for gluten-free sources of viscoelastic proteins. Since 2022, Dr. Espinosa-Ramirez is Leader of the Emerging Food Technologies and Nutraceuticals Research Group from Tecnologico de Monterrey.
